Sorry, Sherra, you know I cook just about as much as you do, lol! I'll pass along this recipe to my girls though, they do make pancakes - just Bisquick so far though. I'm sure they'll appreciate this.
Wish I would have gotten it sooner, I'd have made sure it was included in the Multiples Cookbook! They are finally doing one. It's on sale now for $10. Pre-orders, should arrive early December.

Since there's little chance of any of you stopping in for brunch at my place in northern California I think I can contribute a recipe. I have very limited cooking skills, so I don't share lightly!
PUFFY BAKED GERMAN PANCAKES
1 C. all-purpose flour, sifted (it really is best to sift it even if it's presifted)
1 TBSP sugar
1/4 tsp salt
4 eggs
1 C. milk (I use skim and it's tasty, so any type should work)
4 TBSP butter (the real stuff)
powdered sugar for garnish

Preheat oven to 425 and heat two 9" cast iron skillets in it (heavy cake pans will also work). Mix flour, sugar, and salt. Add milk and eggs and blend only until well-combined (or they will get tough). Take skillets from oven, add two TBSP of butter to each and swirl around to thickly coat the pan. Divide batter between pans, pouring it in quickly and then immediately returning the pans to the oven. Bake about 25 minutes until they puff up and become brown. Cut into halves or thirds, sprinkle with powdered sugar, and serve immediately. Will serve 4-6 if you also have sidedishes (fruitcup, ham, bacon). Nutritional info available, but would probably ruin your enthusiasm for trying it.

Thanks for the recipe - can't wait to try it. If you don't have lemon juice on hand you can also use vinegar in the same way to make Buttermilk!
