Sherra, we make these potatoes every year for Thanksgiving and Easter. They are our favorite way to make mashed potatoes and Peter has the recipe down pat. We love these and there are rarely any leftovers. I LOVE the crock-pot idea too... hmmmm....now that may be another fast way to have these yummy potatoes more than twice a year.

The potatoes were always tricky for me too. After several years of 1/2 cooked, lumpy mashed potatoes (which my family will NEVER let me live down) I finally found a solution. You know those Bob Evans pre-made mashed potatoes? I get a few of those, add some sour cream, cheddar cheese, onion, garlic, whatever I can find that looks good (I'm not good with recipes), and put them in the crock pot. The ingredients get all cooked in nicely and the potatoes are ready whenever we are. The best part is nobody knows they aren't homemade! Don't tell, OK?
